White tea is closest to the natural state of the tea leaf. The tea leaves undergo only two processes: wither and dry. The young tea leaves are collected in the spring (usually in April) and are withered outside for a long time (up to 60 hours) and then dried for about half an hour. The result is a tea that is very delicate and expensive, only the first leaves of the plant are used.
This specialty originated in Fujian region in China. Although nowadays excellent white tea also comes from Yunnan (China), Sri Lanka and India.
In Yunnan, white tea is used to make artistic or blooming teas. The tea is processed by hand and transformed into various creations, for example tea flowers, first in the shape of a sphere, which after infusion develops into a flower.
