The Pu Erh tea is perhaps the most esoteric of the Chinese varieties, traditionally aiding digestion and lowering cholesterol levels. Its earthy scent is pronounced, very similar to coconut and has a particularly successful blend.

Pu Erh tea is different from regular black tea and should therefore be considered as a separate category as it undergoes a completely different fermentation process.
After being withered, the leaves are heated to very high temperatures (approx. 300°C) to completely 'burn' the enzymes. The leaves are then misted with water and clothed to be massaged. At this point the so-called post-fermentation process begins which is usually repeated a number of times.
At the end of the production process, the Pu Erh is often compressed into different shapes (tiles, bird's nests). The tea can then be consumed immediately and stored. This is the only tea that increases in complexity over time. The taste is very distinctive and reminiscent of wood or moist earth and becomes more delicate with time. Pu Erh tea is slowly becoming more popular in Western countries because of its low caffeine content and healthy effect on body and mind.

Pour water that is off the boil, about 95 degrees Celsius on 2 grams of tea and let it steep for 3 minutes for best results.
