Rooibos is not actually a tea, as it does not come from the tea plant (Camellia Sinensis). In reality, it is a small South African grove that has been used for centuries by the indigenous people as a relaxing drink. The 'Aspalathus Linearis' forest grows only in the Cedarberg region of South Africa where it is referred to in Afrikaans as “rooibos” (or “red forest”).
The leaves of this bunch are harvested, ground, fermented and then dried. The end result is a drink that needs a slightly longer infusion than 'regular' tea. In South Africa it is customary to drink the tea according to 'English tradition' (with milk and sugar), although rooibos already has a natural sweetness, so that adding sugar is no longer necessary. Rooibos has a light hazelnut aftertaste and the brewed tea has a beautiful red-orange color.
Rooibos is rich in antioxidants, vitamin C and is caffeine-free.

Pour water that is off the boil, about 90-95 degrees Celsius on 2 grams of tea and let it steep for 3-4 minutes for best results.
